Cajun Fried Potatoes And Sausage Recipe
- 6 x potatoes peeled, sliced
- 2 tsp corn oil
- 1 lb andouille sausage cut 1/4" rounds
- 1/2 x green bell pepper seeded, diced
- 1/2 x red bell pepper seeded, diced
- 1/2 tsp seasoning salt
- 1/2 tsp freshly-grnd black pepper
- 1 x onion peeled, diced
- Place sliced potatoes in a large bowl of cool water and allow to sit for 10 min.
- Drain, rinse and replace water and allow to sit for an additional 10 min; drain.
- Heat oil in a large skillet over medium-high heat.
- Add in sausage to skillet and saute/fry for about 2 min.
- Add in potatoes, peppers, seasoning salt and pepper.
- Cover, lower heat to medium, and continue to cook for about 10 min, stirring occasionally.
- Add in onion and cook mix till ingredients are tender, about 3 more min.
- Serve hot.
- This recipe yields 4 servings.
- Comments: Spicy andouille sausage makes this dish authentic with Cajun flavor.
- However, any spicy sausage would be great in this hearty dish.
