Steamed Chicken Egg Foo Young
- 150 g lean ground chicken
- 2 Tbsp. Kraft Smooth Peanut Butter
- 1/2 tsp. black pepper
- 5 eggs
- 3/4 cup 25%-less-sodium chicken broth
- 1/4 cup water
- 3 green onions, chopped
- 2 Tbsp. reduced-sodium soy sauce
- 1 Tbsp. minced garlic
- 1-1/2 tsp. dried goji berries, hydrated
- 2 Tbsp. canola oil
- 1/3 cup fresh coriander (cilantro)
- Mix first 3 ingredients in large bowl until blended.
- Add eggs, broth and water; whisk until well blended.
- Pour into 1.5- L round casserole dish, cover with foil.
- Place in metal steamer filled with simmering water; cook on medium heat 20 min.
- or until eggs are set.
- Remove from heat.
- Combine onions, soy sauce, garlic and berries in small bowl.
- Heat oil in small saucepan on high heat; stir into onion mixture.
- Pour over chicken mixture; top with coriander.
