Texas Rice Dressing Recipe
- 2 tbsp. flour
- 2 tbsp. vegetable oil
- 1 c. onion, minced
- 1 c. celery, minced
- 1/2 c. green pepper, minced
- 2 cloves garlic, chopped
- 1/2 pound grnd beef
- 1/2 pound grnd pork
- 1/2 pound chicken giblets, minced
- 2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper
- 1 c. chicken broth or possibly water
- 3 c. warm cooked rice
- 1 c. green onion tops, sliced
- Brown flour in oil till it is a deep red-brown, stirring constantly to prevent burning.
- Add in onions, celery, green pepper, and garlic.
- Cook till vegetables are tender.
- Stir in beef, pork, giblets, and seasonings; continue cooking till meat loses its color.
- Blend in broth; cover and simmer 25 min.
- Stir in rice and onion tops; cook 5 min longer.
- Mix should be slightly moist.
- Makes 6 servings.
