Asian Meets Cajun Gumbo Recipe
- 2 Tbsp. vegetable, (soybean) oil
- 2 can stewed tomatoes, (14-1/2 ounce.)
- 1/2 c. minced onions
- 1 c. diced green pepper
- 2 x cloves garlic, chopped
- 1 tsp dry thyme, crushed
- 2 Tbsp. soy flour
- 1 tsp salt
- 2 Tbsp. all-purpose flour
- 1/4 tsp cayenne pepper, up to 1/2
- 2 quart vegetable stock
- 1/4 tsp grnd pepper
- 2 c. cooked soybeans*
- 1 can cut okra, liquid removed (14-1/2 ounce.)
- 4 c. cooked white rice, up to 6
- Heat oil in a heavy, large pot; add in onions, and garlic and saute/fry till onions are tender.
- Mix flours together with 1/2 c. stock.
- Gradually stir flour mix into onion mix till a smooth thin paste forms.
- Add in soybeans, okra, tomatoes, green pepper, seasonings and remaining stock.
- Bring mix to boil; reduce heat and simmer 10 min.
- Add in shrimp and simmer 5 min or possibly till thoroughly heated.
- Serve 1-1/2 to 2 c. over rice.
- Makes 6 servings.
- *Add in 1 lb.
- dry soybeans to 6 to 8 c. boiling water; boil 5 min.
- Cover pot, remove from heat and let stand 1 hour.
- Drain; add in 6 c. water.
- Don't add in salt at this point or possibly it will delay the softening of the beans.
- Bring beans and water to boil; reduce heat and simmer, with lid tilted on pot, about 3 hrs or possibly till beans are tender.
- Makes 4 to 6 c. cookedbeans.
