Asian Meets Cajun Gumbo Recipe

  1. Heat oil in a heavy, large pot; add in onions, and garlic and saute/fry till onions are tender.
  2. Mix flours together with 1/2 c. stock.
  3. Gradually stir flour mix into onion mix till a smooth thin paste forms.
  4. Add in soybeans, okra, tomatoes, green pepper, seasonings and remaining stock.
  5. Bring mix to boil; reduce heat and simmer 10 min.
  6. Add in shrimp and simmer 5 min or possibly till thoroughly heated.
  7. Serve 1-1/2 to 2 c. over rice.
  8. Makes 6 servings.
  9. *Add in 1 lb.
  10. dry soybeans to 6 to 8 c. boiling water; boil 5 min.
  11. Cover pot, remove from heat and let stand 1 hour.
  12. Drain; add in 6 c. water.
  13. Don't add in salt at this point or possibly it will delay the softening of the beans.
  14. Bring beans and water to boil; reduce heat and simmer, with lid tilted on pot, about 3 hrs or possibly till beans are tender.
  15. Makes 4 to 6 c. cookedbeans.
