Meat Curry
- 3 Tbsp. butter
- 1 tsp. garlic, chopped
- 1 c. apple, cut in small cubes
- 3/4 tsp. dry mustard
- 2 1/2 c. chicken broth
- 1/2 c. milk
- 3 Tbsp. chutney
- 1 c. onion, chopped
- 1/2 c. celery, minced
- 1/4 c. flour
- 1 Tbsp. curry powder
- 1 bay leaf
- 3 c. meat, cut in bite size pieces
- Melt butter in saucepan and add onion, garlic, celery and apple.
- Cook, stirring often, for about 5 minutes.
- Blend flour, curry powder and mustard; sprinkle it over vegetables.
- Stir.
- Add bay leaf and chicken broth; rapidly stir with wire whisk.
- When mixture has thickened, let simmer for 15 minutes.
- Stir bottom often to prevent from sticking.
- Add meat, milk and finely chopped chutney; simmer 4 to 5 minutes longer.
- Serve with rice.
