Irish Dunmurry Rice

  1. Melt butter in heavy saucepan.
  2. Add onion, rice, and mushrooms, saute until rice starts to brown.
  3. Add stock, parsley, salt, and pepper; bring to boil.
  4. Reduce heat to low; cook, covered, 25 minutes or until all liquid is absorbed.
  5. Grease 1-quart mixing bowl.
  6. Pack rice into bowl tightly.
  7. Keep warm while preparing tomatoes.
  8. Split tomatoes in half.
  9. Combine melted butter, bread crumbs, cheese, salt, pepper, and paprika; mix well.
  10. Sprinkle crumb mixture over tomatoes; broil in preheated broiler 4 inches from heat until golden.
  11. Unmold rice onto warm serving dish; surround with tomatoes.
  12. Serve.
