Banana Chocolate Chip Yogurt Muffins
- 1 1/2 cups oats, quick cooking
- 1 1/2 cup whole wheat flour
- 2 each bananas ripe, mashed
- 1 cup yogurt, plain
- 1/2 cup almond milk
- 1/2 cup honey
- 2 teaspoon baking powder
- 1 teaspoon baking soda
- 1 each eggs
- 1/2 teaspoon nutmeg
- 1 teaspoon cinnamon
- 1/2 teaspoon sea salt
- 1 teaspoon vanilla extract
- 1/2 cup chocolate chips
- 1/2 cup walnuts chopped
- Preheat oven to 400F (200C).
- Combine oats, flour, baking soda, baking powder, nutmeg, cinnamon, and salt in a large bowl.
- In a separate bowl, combine bananas, yogurt, milk, vanilla, egg and honey.
- Mix well.
- Add dry ingredients into the wet and mix just until well incorporated.
- If desired, add in the chocolate chips and / or walnuts.
- Fill lightly greased muffin tins and bake for about 15 to 18 minutes.
