Hoisin Baked Salmon w/ Mandarin

  1. Marinate fish in orange juice and ginger for 1-4 hours.
  2. Spray a saute pan that is just large enough to fit the salmon with non-stick cooking spray.
  3. Add mandarins and their juice to the pan.
  4. Save a few slices for garnish.
  5. Toss fish with enough oil to cover and season with dried spices.
  6. Place atop mandarins.
  7. Bake at 350 for approximately 10-15 minutes or until thermometer reaches 145.
  8. Baste with hoisin sauce during last five minutes of cooking.
  9. Variations; Mirin, parsley, mustard, coriander seed, sesame seeds, pineapple, soy sauce, oyster sauce, wasabi, 5 spice seasoning, celery seed, lime, cilantro, rice vinegar, basil, orange or lemon peel seasoning
