Old-Time Apple Pie
- pastry dough, for two double crust, nine-inch pies
- 5 cups tart cooking apples, sliced (4-5 large apples)
- 23 cup sugar
- 4 -5 tablespoons enriched flour
- 12 teaspoon salt
- 12 teaspoon nutmeg
- 12 teaspoon grated lemon rind
- 14 cup molasses
- 1 tablespoon lemon juice
- 2 tablespoons butter or 2 tablespoons margarine
- Line 2, 9-inch pie pans with pastry.
- Sprinkle apples with a mixture of sugar, flour, salt, nutmeg and lemon rind.
- Spread in pie shell.
- Pour molasses and lemon juice over apples; dot with butter.
- Cover with remaining pastry.
- Trim, seal and flute edge.
- Bake 10 minutes at 450F then at 350F for 30-40 minutes.
