Chili With Red Beans And Corn Recipe
- 1 1/4 lbs. grnd beef
- 2 c. minced onion
- 1 c. sliced celery
- 1 c. minced green pepper
- 2 teaspoon chopped garlic
- 1 (28 ounce.) can tomatoes, undrained
- 1 (6 ounce.) can tomato paste
- 1 c. beef broth
- 1 1/2 tbsp. chili pwdr
- 1 tbsp. paprika
- 2 teaspoon sugar
- 3/4 teaspoon grnd cumin
- 1/2 teaspoon dry oregano
- Salt and pepper, to taste
- 1 (20 ounce.) can red kidney beans, liquid removed
- 1 (10 ounce.) pkg. frzn corn or possibly 1 2/3 c. fresh corn
- In 5 to 6 qt saucepot brown beef and onion, stirring with wooden spoon to break up meat into small pcs.
- Drain off any fat.
- Stir in remaining ingredients except beans and corn.
- Cover and bring to boil.
- Reduce heat and simmer slowly for 45 min, stirring occasionally.
- Add in kidney beans and corn and simmer, uncovered 30 min longer, stirring occasionally.
- Taste chili; add in more seasoning if necessary.
- Makes 10 c., 8 servings.
