Sue's Cinnamon, Peach Cobbler or Apple Pie Ice Cream

  1. Coarsely grind cinnamon baking bits in blender or processor.
  2. Set aside.
  3. Combine milk, cream, in a large saucepan.
  4. Scrape in seeds from vanilla beans, and throw in beans.
  5. Bring to a simmer.
  6. Wisk sugar and egg yolks to blend in a glass bowl.
  7. Gradually add, whisking the egg mixture the whole time into the hot cream mixture.
  8. Return mixture to same saucepan.
  9. Stir over med-low heat until custard starts to thicken and will leave a path on the back of a spoon when finger is drawn across, about 5-6 minutes.
  10. Please do not boil.
  11. Strain into a large bowl.
  12. (I leave seeds because I like them)
  13. Whisk in ground cinamon.
  14. Chill until cold.
  15. Transfer to ice cream maker, and process according to manufacturers instructions.
  16. Last 5-6 minutes of mixing, add the grated cinnamon bits to ice cream mixture.
  17. To Make Peach Cobbler Ice Cream, or Apple Pie Ice Cream:.
  18. Instead of adding the cinnamon bits at the end:.
  19. Add 2 cups of either Apple Pie, or your own Peach Cobbler to the other ingredients, and let it work for a few minutes just to blend into the ice cream.
