Easy Corn Fritters with Spicy Mayo

  1. In a large bowl, combine corn, onion, garlic, and cayenne and stir together well.
  2. Add beaten eggs and stir, then add flour.
  3. Season with salt and pepper.
  4. In a large skillet over medium-high heat, heat olive oil.
  5. Using your hands, form corn mixture into small patties.
  6. (If mixture feels too thin, add more flour, one tablespoon at a time.)
  7. Cook fritters until crisp and golden, about 2 minutes, then flip and cook 2 minutes more.
  8. Transfer to a paper towel-lined plate to cool.
  9. In a small bowl, stir together mayo and hot sauce.
  10. Serve fritters with spicy mayo.
