Apple Pancakes with Cinnamon-Sugar Topping
- 1/2 cup (1/2 of 8-oz. tub) PHILADELPHIA Cream Cheese Spread
- 1/2 cup sugar, divided
- 1/2 tsp. ground cinnamon
- 1-3/4 cups flour
- 1 Tbsp. CALUMET Baking Powder
- 1/4 tsp. salt
- 2 eggs
- 1 cup milk
- 1/4 cup oil
- 1 tsp. vanilla
- 2 Golden Delicious apples, peeled, coarsely grated
- 1/2 tsp. zest and 1 Tbsp. juice from 1 lemon Safeway 4 ct For $5.00 thru 02/09
- Beat cream cheese spread, 1/4 cup sugar, salt and cinnamon with mixer until blended; refrigerate until ready to use.
- Combine flour, baking powder and remaining sugar in large bowl.
- Whisk eggs, milk, oil and vanilla in medium bowl until blended.
- Toss apples with lemon zest and juice.
- Add to egg mixture; mix well.
- Add to flour mixture; stir just until moistened.
- Ladle batter onto hot nonstick griddle or into hot nonstick skillet, using 1/4 cup batter for each pancake.
- Cook until bubbles form on tops, then turn to brown other sides.
- Serve with cream cheese mixture.
