Classic Sour Orange Mojo

  1. Mash the raw garlic, chilies, salt and cumin together in a mortar with the pestle until fairly smooth.
  2. Scrape into a bowl and set aside.
  3. Heat the olive oil in a small pot until quite hot and pour it, whisking over the garlic-chile mixture.
  4. Allow to stand 10 minutes.
  5. Whisk in the sour orange juice and the vinegar.
  6. Season with the pepper and set aside until ready to use.
  7. Will keep tightly covered in the refrigerator for up to one month.
