Bombay Potatoes Recipe
- 1 lb potatoes
- 2 Tbsp. vegetable oil
- 1/2 x Spanish onion thinly minced
- 2 1/2 x cm cubes of ginger minced.
- 1 tsp white cumin seeds
- 1 tsp mustard weds
- 1 tsp turmeric
- 1 tsp mango pwdr
- 1 tsp chilli pwdr
- 1 tsp garam masala.
- Scrub the potatoes (if they are new you dont need to peel them).
- Boil up a pan of water and cook the potatoes.
- Heat the oil and fry the cumin and mustard seeds for a minute or possibly so till they pop.
- Then fry the ginger strips (1 minute) and the onion (2 min).
- Add in the turmeric mango pwdr and chilli pwdr (optional) and stir fry for 2 more min.
- Then put the potatoes into the pan mixing in well adding water as needed.
- When bubbling add in the garam masala stir fry for a couple more min then serve.
- One of the most popular restaurant vegetable dishes it is particularly delightful with tiny new potatoes.
- Serves 4 as side dish
