Bombay Potatoes Recipe

  1. Scrub the potatoes (if they are new you dont need to peel them).
  2. Boil up a pan of water and cook the potatoes.
  3. Heat the oil and fry the cumin and mustard seeds for a minute or possibly so till they pop.
  4. Then fry the ginger strips (1 minute) and the onion (2 min).
  5. Add in the turmeric mango pwdr and chilli pwdr (optional) and stir fry for 2 more min.
  6. Then put the potatoes into the pan mixing in well adding water as needed.
  7. When bubbling add in the garam masala stir fry for a couple more min then serve.
  8. One of the most popular restaurant vegetable dishes it is particularly delightful with tiny new potatoes.
  9. Serves 4 as side dish
