Texas Style Chili...sort Of
- 4 (14 ounce) cans beef stock
- 2 (14 ounce) cans diced tomatoes
- 1 (4 ounce) can green chilies
- 1 large white onion
- 1 yellow pepper
- 1 orange bell pepper
- 3 lbs lean ground beef
- 1 lb hot Italian sausage
- 1 lb thick cut maple bacon
- 14 teaspoon cayenne pepper
- 14 teaspoon garlic powder or 14 teaspoon granulated garlic
- 14 teaspoon paprika
- 14 teaspoon onion powder
- 1 teaspoon white pepper
- 3 ounces chili powder
- .Brown ground beef and sausage, drain fat and set aside.
- Cook bacon, drain fat and set aside.
- Use a dutch oven or large stew pot and add stock,tomatoes,green chilies and spices.
- bring to a boil.
- Chop peppers and onion, add to the pot, return to boil.
- Add beef,sausage and bacon to the pot, return to boil.
- Reduce heat and simmer until the mixture thickens to your liking.
