Southwest Three Cheese Chicken Bake
- 1 pkg. (6 oz.) FRESH TAKE Southwest Three Cheese Recipe Cheese Breadcrumb Mix, mixed together
- 2 cups shredded cooked chicken
- 2 cups cooked long-grain white rice
- 1 can (10-3/4 oz.) fat-free reduced-sodium chicken broth
- 1 cup BREAKSTONE'S Reduced Fat or KNUDSEN Light Sour Cream
- 1 jar (7 oz.) roasted red peppers, drained, chopped
- Heat oven to 350F.
- Reserve 1 cup cheese mixture.
- Combine remaining cheese mixture with remaining ingredients; spoon into 1-1/2-qt.
- casserole sprayed with cooking spray.
- Top with reserved cheese mixture.
- Bake 20 to 25 min.
