Raisin Crunch Cookies

  1. Preheat oven to 350 degrees F. Mix flour, baking powder, baking soda and oats; set aside.
  2. Beat butter and sugars in large bowl with electric mixer on medium speed until light and fluffy.
  3. Add egg and vanilla; mix well.
  4. Gradually add flour mixture, beating until well blended after each addition.
  5. Add cereal, coconut and raisins; stir until well blended.
  6. Drop heaping teaspoonfuls of dough, 2 inches apart, onto ungreased baking sheets.
  7. Bake 14 to 16 min.
  8. or until lighty browned.
  9. Cool on baking sheets 3 to 4 min.
  10. ; remove to wire racks.
  11. Cool completely.
  12. Store in tightly covered container at room temperature.
