Pisco Sour
- 1 egg white
- 6 ounces Pisco
- 2 ounces fresh lime or lemon juice
- 12 ounces Simple Syrup (p. 376), or superfine granulated sugar
- 2 cups crushed ice
- Angostura bitters
- Place the egg white in a blender and blend briefly, until frothy and light.
- Then add all the other ingredients except the bitters, and blend until frothy and smooth.
- Taste and adjust to your liking with more citrus or sugar.
- Pour into two glasses and sprinkle with a drop or two of bitters.
