Fiesta Chicken Enchiladas Made Over

  1. Heat oven to 375 degrees F.
  2. Heat large skillet sprayed with cooking spray on medium heat.
  3. Add chicken, peppers and chili powder; cook and stir 8 min.
  4. or until chicken is done.
  5. Stir in 1/2 cup salsa and Neufchatel; cook and stir 3 to 5 min.
  6. or until Neufchatel is melted and mixture is well blended.
  7. Stir in 1/2 cup shredded cheese.
  8. Spoon heaping 1/3 cup mixture down center of each tortilla; roll up.
  9. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray; top with remaining salsa and shredded cheese.
  10. Cover.
  11. Bake 20 min.
  12. or until heated through.
