Pizza Quesadillas

  1. On one half of the tortilla, sprinkle on 1/2 cup mozzarella cheese.
  2. Layer on the pepperoni, olives, and peppers.
  3. Sprinkle the pizza sauce over the toppings.
  4. Sprinkle the remaining 2 tablespoons of mozzarella and the Parmesan cheese.
  5. Sprinkle the oregano over the cheese.
  6. Fold over the tortilla and place in a heated, dry nonstick skillet.
  7. Cook over medium-low heat for 2-3 minutes until golden and crispy.
  8. Flip and cook the other side for 2-3 minutes until it is also golden and crispy.
  9. Slide the quesadilla onto a cutting board.
  10. Wait 1 minute, then cut with a pizza cutter into triangles.
  11. Serve with extra heated pizza sauce and enjoy!
