Sweet & Salty Teriyaki King Oyster Mushroom and Pork Rolls

  1. Cut the mushrooms vertically into 4 pieces.
  2. Cut the pork in half, season both sides with salt and pepper.
  3. Place the mushrooms on the pork and wrap diagonally.
  4. Dust lightly with katakuriko.
  5. Heat vegetable oil in a frying pan.
  6. Place the wrapped mushrooms with the seam down.
  7. Make sure the seam gets cooked well.
  8. Occasionally turn to brown each side.
  9. Add the sake, cover with a lid, and steam for 3 minutes.
  10. Add the combined ingredients and simmer to infuse the flavors.
  11. Stir in the mirin, and once lustrous, optionally add shichimi spice, they're done.
