Secret Macaroni and Cheese

  1. Bring large pot of water to a boil.
  2. Add macaroni; stir to prevent sticking.
  3. Cook until just tender, about 10 minutes; drain.
  4. Meanwhile, in food processor or blender, puree tofu until completely smooth.
  5. Transfer to medium saucepan and add cheese and margarine.
  6. Place over low heat and slowly bring to a gentle simmer, stirring often.
  7. Cook until cheese is melted, about 5 minutes.
  8. In large bowl, combine cooked macaroni and cheese sauce and stir to blend.
  9. Season with salt to taste and serve hot.
