Ukranian Babka Recipe
- 3 potatoes, peeled & halved (1 lb.)
- 1 c. cream style cottage cheese
- 2 tbsp. butter
- 2 egg yolks
- 1/2 teaspoon salt
- 1/8 teaspoon white pepper
- 2 egg whites
- Cook potatoes covered in boiling salted water till tender, drain.
- In mixing bowl, mash potatoes, cottage cheese, butter, egg yolks, salt and pepper till fluffy.
- Beat egg whites till stiff.
- Spoon into greased 1 qt casserole till puffed and golden brown, 375 degrees for 30 to 35 min.
- Serve hot.
