Carrot, Almond and Raisin Energy Bites
- 1 cup Rolled Oats
- 1/4 cups Raw Almonds, Halved
- 1/4 cups Carrot, Shredded
- 1/4 cups Raisins
- 1/4 cups Ground Flaxseed
- 1/2 cups Peanut Butter
- 13 cups Honey
- Combine oats, almonds, shredded carrots (I use a potato peeler to shred them), raisins and flaxseed in a medium-sized mixing bowl.
- Add peanut butter and honey and stir to coat evenly.
- Refrigerate for 1 hour.
- Shape into 1-inch balls.
- (This yielded me about 20.)
- Store in the refrigerator.
