Carrot, Almond and Raisin Energy Bites

  1. Combine oats, almonds, shredded carrots (I use a potato peeler to shred them), raisins and flaxseed in a medium-sized mixing bowl.
  2. Add peanut butter and honey and stir to coat evenly.
  3. Refrigerate for 1 hour.
  4. Shape into 1-inch balls.
  5. (This yielded me about 20.)
  6. Store in the refrigerator.
