Spaghetti With Chicken & Dolcelatte
- 8 ounces spaghetti
- 1 tablespoon olive oil
- 4 scallions, diagonally sliced
- 10 ounces cooked chicken, diced
- 3 ounces dolcelatte, diced
- 1 cup creme fraiche
- 1 tablespoon lemon juice
- 2 tablespoons parsley, chopped
- 1 ounce pine nuts, lightly toasted
- fresh ground black pepper
- Cook the spaghetti following pack instructions.
- Meanwhile, heat the oil in a pan and cook the scallions for 1 minute, stirring occasionally.
- Add the chicken, dolcelatte, creme fraiche, lemon juice, half the parsley and seasoning to taste.
- Mix well until the cheese has melted and the sauce is bubbling.
- Stir in the cooked, drained spaghetti, mix thoroughly and transfer to a warmed serving dish.
- Sprinkle the pine kernels and remaining parsley over the top.
- Serve immediately with a mixed green salad.
