Mixed Citrus Marmalade Recipe
- 4 1/2 quart. water
- 1 1/2 c. thinly sliced grape fruit rind
- 1/2 c. thinly sliced orange rind
- 1 1/2 c. minced grapefruit sections
- 3/4 c. minced orange sections
- 1/2 c. thinly sliced lemon
- About 2 1/4 c. sugar
- Combine 1 1/2 qt water and rinds in Dutch oven.
- Bring to boil.
- Boil, uncovered, 5 min; drain and repeat.
- Combine 1 1/2 qt water, rind, minced fruit and lemon; bring to a boil.
- Boil 5 min.
- Cover and let stand in cold place 12-15 hrs.
- Uncover and bring mix to boil and boil 35-40 min.
- Measure amount of fruit and liquid; add in 1 c. sugar per 1 c. fruit and liquid.
- Stir well.
- Bring mix to a boil and boil till mix registers 220 degrees on candy thermometer, stirring frequently.
- Pour marmalade into jars.
- Process in boiling water bath 10 min.
