Sweet Potato Casserole
- 4 can yams or sweet potatoes
- 1 cup sugar
- 1/2 cup brown sugar
- 4 tbsp butter, melted
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 2 tsp vanilla
- 1 can 8 oz crushed pineapple, drained (optional)
- 2 tbsp Caribbean Rum (optional)
- 1/4 cup dried cranberries or raisins (optional)
- 1/4 cup chopped pecans
- 1 marshmallows
- Preheat oven to 350.
- Place potatoes in mixing bowl and mash well
- Add all other ingredients except pecans and marshmallows.
- Pour into sprayed 9 x 13 pan.
- Sprinkle top with pecans then marshmallows.
- Bake for 35 minutes.
- For a crispy type top cook for 25 minutes then add mixture of 1/4 cup brown sugar, 1 tbsp of butter, 2 tbsp flour to pecans and marshmallows then top and bake the additional 10 minutes.
