Cocoa-Spice Rub for Roast Turkey

• 2 tbsp. cocoa
• 2 tbsp. ground cumin
• 1 1/2 tbsp. paprika
• 1 tbsp. ground coriander
• 2 tsp. salt
• 2 tsp. fresh ground black pepper
• 1 1/2 tsp. chipotle powder
• 1/2 tsp. ground allspice
• 1 turkey

1. Combine cocoa, cumin, paprika, coriander, salt, pepper, chipotle powder, and allspice in a bowl.
2. Rub turkey with olive oil, then apply 7 tablespoons rub.
