Sausages With Broccoli
- 1 34 lbs Italian sausage
- 1 14 lbs broccoli florets
- 1 teaspoon olive oil
- 2 shallots
- 3 garlic cloves
- 14 dried red chili, chopped
- 12 cup chicken broth
- 1 tablespoon lemon juice
- 6 black olives, pitted
- Prick sausages, place in a single layer in a large frying pan, add cold water to 1/2 inch.
- Bring to boil, reduce heat, and simmer for 20 minutes, turning from time to time.
- If the water evaporates too rapidly, add a bit more.
- Meanwhile, boil the broccoli in salted water for 4-5 minutes.
- Drain and set aside.
- Pour off the fat from the skillet and wipe it out with a paper towel.
- Add the oil and brown the sausages briefly.
- Push them to one side and add the shallots, garlic and chile (or chile flakes).
- Cook for 3-4 minutes.
- Add broth and lemon juice.
- Cook gently until reduced by half.
- Add broccoli and olives.
- Gently mix until heated through.
- Serve and enjoy.
