Healthy French Fries Recipe

  1. Scrub potato, but don't pare.
  2. Cut in half lengthwise, cut each half into 8 lengthwise wedge-shaped strips.
  3. Soak strips in bowl of cool water for 20 min.
  4. Use shallow, non-stick baking pan, spray with cooking spray.
  5. Blot potato strips dry; place in small bowl.
  6. Sprinkle with oil and paprika and stir well to coat.
  7. Arrange in single layer in pan.
  8. Bake at 475 degrees for 20 min, stirring twice.
  9. Potatoes are cooked when crisp and golden brown outside and tender when tested with a fork.
  10. Blot on paper toweling.
  11. Sprinkle with salt (garlic pwdr and Parmesan cheese, optional.)
