Simply Spiced Chicken Kabobs
- 3 Tablespoons Lemon Juice
- 2 Tablespoons Basil
- 1 teaspoon Garlic Powder
- 1 teaspoon Paprika
- 1 teaspoon Cumin
- 1 pound Boneless, Skinless Chicken Breasts, Cut Into 2-inch Pieces
- 2 cups Summer Squash And Zucchini, Sliced
- 2 cups Sliced Mushrooms
- 1 cup Grape Tomatoes
- Stir together lemon juice, basil, garlic, paprika, and cumin in a medium bowl.
- Add chicken and toss well to coat.
- Cover with plastic wrap and marinate in the refrigerator for 20 minutes.
- Light the grill.
- Remove marinated chicken from the fridge and evenly distribute the meat onto metal skewers (if using wooden, soak skewers in water for 10 minutes beforehand).
- Chop up squash and zucchini into 1-inch pieces and slice mushrooms.
- Add prepared vegetables and grape tomatoes to separate skewers.
- Grill chicken skewers for 10-12 minutes.
- Once the first side is cooked, rotate the chicken onto the other side and cook until they are no longer pink in the center, about 3-4 minutes longer.
- Meanwhile, cook the vegetables until your desired level of doneness, rotating occasionally to avoid burning.
