Cherry Batter (Similar to Clafouti)
- 1 34 ounces flour
- 1 pinch salt
- 1 34 ounces sugar
- 3 eggs
- 12 pint milk (1 cup)
- 1 tablespoon cherry brandy or 1 tablespoon vanilla
- 1 ounce melted butter
- 1 lb ripe black cherries
- butter
- confectioners' sugar
- whipped cream
- Preheat oven to 400 degrees F.
- Combine flour and salt; sieve into a bowl.
- Beat the eggs and blend in gradually.
- Warm the milk and slowly add, beating vigorously.
- Stir in the cherry brandy or vanilla; blend in the melted butter.
- Stone cherries, removing the pits.
- Grease a 1 pint (2 cup) ovenproof porcelain baking dish.
- Spread cherries over bottom and carefully pour the batter over all.
- Dot with a few tiny pieces of buttter.
- Bake in preheated oven for 20 minutes.
- Reduce heat to 375 degrees F. and bake 20 more minutes.
- To serve: Dredge the cake with sieved confectioners' sugar.
- Top with a dollop of whipped cream.
- Cake is best served warm.
