21 Alarm Chile Lowfat Recipe
- 1 lb Extra-lean grnd beef
- 1 med Onion -- minced fine
- 30 ml Garlic -- finely minced
- 1 lrg Green pepper -- cut into 1/2 "
- 2 Cans 28oz Crushed Tomatoes 2 tsp.
- Oregano 2 tsp.
- Cumin 3 Tbsp.
- Chili pwdr 2 Tbsp.
- Unsweetened cocoa pwdr 2 tsp.
- Sugar 1 tsp.
- Crushed warm pepper 1 tsp.
- Tabasco sauce 1 can 15z kidney beans - rinsed a strainer
- In a 2 1/2 qt saucepan cook the meat over medium heat till it is well done, about 6-8 min, stirring frequently to crumble the meat.
- Pour off the fat.
- With a slotted spoon transfer meat to paper towels to absorb extra saute/fry the onion, garlic, and green pepper with 1/2 c. of the crushed tomatoes for 3 min.
- Add in the oregano, cumin, chili pwdr, cocoa pwdr, sugar, warm pepper, and Tabasco sauce, and continue cooking for 3 min more.
- Add in the beans, meat, and the remaining crushed tomatoes, and cook together for 25 min over low heat.
- YIELD: Makes 8 1-c. servings Each
