Jellied Mushroom Soup

  1. Heat pot coated with cooking spray.
  2. Saute mushrooms until tender, stirring often.
  3. Add consomme and simmer 5 minutes.
  4. Place gelatin in 1/2 cup water and allow to stand 5 minutes to dissolve; stir into hot soup.
  5. Stir in salt, pepper, tarragon and sherry.
  6. Pour soup into individual small bowls until set.
  7. Garnish with watercress before serving.
