Bacon Fried Squirrel Recipe
- 4 x young squirrels each cut 6 to 8 pcs
- 1/2 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 1/2 tsp garlic pwdr
- 1/4 c. all-purpose flour
- 8 slc bacon minced
- 1/4 c. onion sliced
- 2 x celery stalks sliced
- 1 Tbsp. fresh rosemary leaves chopped
- 2 tsp lemon juice
- 1 c. chicken broth
- 4 c. hot cooked rice
- Combine salt, pepper, garlic pwdr and flour.
- Dredge squirrels in flour mix.
- Cook bacon in a heavy skillet over medium heat till browned.
- Fry squirrel pcs in bacon grease till medium brown.
- Add in remaining ingredients and reduce heat to simmer.
- Cover and cook for about 1 1/2 hrs or possibly till squirrel pcs are tender.
- Serve with hot rice.
- This recipe yields 4 servings.
- Comments: Anything fried, squirrel included, tastes pretty good.
- The squirrels are first fried and then simmered in liquid till tender.
- Young squirrels taste much better than old ones.
- If you are worried about fat and cholesterol, eat a carrot.
