Spicy shrimp
- 2 Tablespoons Olive Oil
- 1 whole Onion, Diced
- 3 cloves Garlic, Minced
- 1/2 teaspoons Crushed Red Pepper, Or To Taste
- 1/2 cups White Wine
- 2 whole Tomatoes, Diced
- 1/2 cups Chicken Broth
- 1/2 pounds Cooked Shrimp - Or More, If You're Feeling Decadent
- 1/2 cups Feta Cheese
- 1 bunch Fresh Basil
- Heat a large skillet and add olive oil.
- Saute onions until soft; add garlic and red pepper and stir for 30-45 seconds, until garlic is fragrant.
- Deglaze the pan with white wine, stirring up any browned bits.
- Add tomatoes and chicken broth, and simmer for 15-20 minutes, or until sauce is reduced and thickened.
- Add shrimp and stir until warm.
- (I tend to cut the tails off the shrimp beforehand to make eating less cumbersome.)
- Top with feta and basil and serve.
- (Note: the feta with garlic and herbs is good with this dish.)
- This is especially good served on a creamy risotto, though it would work on pasta, too.
