Spicy shrimp

  1. Heat a large skillet and add olive oil.
  2. Saute onions until soft; add garlic and red pepper and stir for 30-45 seconds, until garlic is fragrant.
  3. Deglaze the pan with white wine, stirring up any browned bits.
  4. Add tomatoes and chicken broth, and simmer for 15-20 minutes, or until sauce is reduced and thickened.
  5. Add shrimp and stir until warm.
  6. (I tend to cut the tails off the shrimp beforehand to make eating less cumbersome.)
  7. Top with feta and basil and serve.
  8. (Note: the feta with garlic and herbs is good with this dish.)
  9. This is especially good served on a creamy risotto, though it would work on pasta, too.
