Chikuwa and Cucumber Sushi Roll
- 4 Chikuwa
- 2 quarter slices Cucumber
- 2 sheets Nori seaweed
- 2 tbsp Golden sesame seeds
- 1 two small rice bowls worth Sushi rice
- Prepare the chikuwa as in.
- Stuff each chikuwa with a cucumber stick.
- With the rough side of the nori facing up, spread a little less than one rice bowl of sushi rice evenly on top, evenly sprinkle golden sesame seeds, lay a stuffed chikuwa at one end and roll.
- Cut into bite sized rolls and serve.
- Serve with a dab of umeboshi paste.
