Chikuwa and Cucumber Sushi Roll

  1. Prepare the chikuwa as in.
  2. Stuff each chikuwa with a cucumber stick.
  3. With the rough side of the nori facing up, spread a little less than one rice bowl of sushi rice evenly on top, evenly sprinkle golden sesame seeds, lay a stuffed chikuwa at one end and roll.
  4. Cut into bite sized rolls and serve.
  5. Serve with a dab of umeboshi paste.
