Apricot Glazed Brisket Recipe

  1. Heat oven to 475 degrees.
  2. Season brisket with salt, paprika and pepper.
  3. Place brisket fat-side down in a Dutch oven.
  4. Scatter onions and carrots around the beef.
  5. Cook 15 min.
  6. Turn brisket fat-side up and add in 1/2 c. water.
  7. Cover tightly.
  8. Reduce oven temperature to 375 degrees.
  9. Cook 3 to 4 hrs, till brisket is fork tender.
  10. Heat broiler.
  11. Remove brisket from Dutch oven and place on a broiler pan.
  12. Spread jam over brisket.
  13. Broil 6 inches from heat source 5 min, till jam is lightly browned in spots.
  14. While brisket is broiling, remove onions and carrots from cooking juices.
  15. Tilt Dutch oven and remove surface fat with a spoon.
  16. Let brisket rest 15 min before carving.
  17. Serve with degreased cooking juices.
