Simple Vanilla Ice Cream

  1. In a heavy bottomed saucepan, heat cream, half and half, sugar and vanilla bean to a boil.
  2. In a large stainless steel bowl, reserve egg yolks.
  3. Temper (add a little at a time) hot cream mixture into the egg yolks while constantly stirring.
  4. Place entire mixture back onto heat for one more minute, stirring constantly.
  5. Do not boil.
  6. Just heat until the mixture coats the back of the spoon.
  7. Remove from heat and strain.
  8. Cool over an ice bath.
  9. Freeze in ice cream machine according to manufacturer's instructions.
