Jen's Stuffed Bell Peppers
- 4 lg. bell peppers
- 1 lb. ground beef
- 1 sm. onion, chopped
- 1 can (15 oz.) Hunt's tomato sauce
- 1 cup bread crumbs
- 1 tbsp. Worcestershire sauce
- 1 tbsp. chopped parsley
- 1/2 tsp. dried basil
- 1/4 cup grated parmesan cheese
- 1 cup shredded mozzarella cheese
- Brown ground beef with chopped onion.
- Meanwhile, cut off tops of peppers and hollow out ribs and seeds.
- Place upside down on a paper towel in your microwave and cook on high for 6 minutes.
- Let sit.
- After ground beef is browned and drained, add tomato sauce, spices, and worcestershire sauce.
- Stir until blended.
- Add bread crumbs and parmesan cheese.
- Mix together until bread crumbs are soaked through.
- Place peppers in a microwave safe casserole dish and fill with stuffing mix.
- Microwave on high for 10 minutes.
- Rotate half way through if necessary.
- Add shredded mozzarella cheese on top and microwave on high for 1 minute to melt cheese.
- May serve with rice.
