Fluffy Stir-fried Bitter Melon and Eggs

  1. Cut the bitter melon in half, remove the seeds with a spoon, and thinly slice it into 5 mm slices.
  2. Lightly rub with salt and microwave for 1 minute.
  3. Pour into a strainer.
  4. Heat a frying pan well and pour in the vegetable oil.
  5. Add the eggs.
  6. When the eggs are half-cooked, immediately remove them from the heat.
  7. Add vegetable oil and stir-fry the bitter melon.
  8. Add the dashi stock granules and quickly stir-fry.
  9. Return the eggs to the pan and add the soy sauce indirectly by pouring it onto the inner edge of the pan.
  10. Stir-fry.
  11. Adjust the seasoning with salt and pepper.
  12. Arrange on a dish and sprinkle on the sesame seeds.
