Caribbean Chicken

  1. combine cornstarch, 1/2 the pineapple juice, thyme, mustard, and red pepper.
  2. set aside.
  3. sprinkle chicken with salt and saute for 3-4 minutes with cooking spray.
  4. pour remaining pineapple juice into skillet.
  5. add onions and raisins and cook for about a minute.
  6. stir in the cornstarch mixture and bring to a boil.
  7. cook and stir until thickened 1-2 minutes.
  8. stir in bananas and serve over rice.
