Sweetheart Cake
- 1 egg
- 1 pinch salt
- 4 ounces margarine
- 4 ounces sugar
- 8 ounces self raising flour
- milk
- Rub the fat into the flour.
- Add sugar, salt and mix with beaten egg to a dough you can handle.
- Cut into 2 halves and roll out.
- Put 1 half on a plate and fill with jam or lemon curd.
- Wet the edges and put the other half on top.
- Trim and bake in a hot oven until golden brown.
