Sesame Quinoa With Tofu

  1. Place tofu on several layers of heavy-duty paper towels then place a heavy plate on top.
  2. ; let stand 20 minutes.
  3. Cut into 1/2-inch cubes.
  4. Rinse the Quinoa until the water runs clear.
  5. It should NOT look soapy.
  6. Heat oil in pan over medium heat.
  7. Add tofu and sesame; saute 3 minutes.
  8. Remove from pan.
  9. Add quinoa to pan; cook 3 minutes, stirring frequently.
  10. Add stock and salt; bring to a boil.
  11. Cover, reduce heat, and simmer 20 minutes.
  12. Place in a large bowl.
  13. Add tofu mixture, green onions, Braggs, and pepper; toss.
