Fish, Lemon Broccoli, served with Rice

  1. Sprinkle fillets with lemon juice and pepper.
  2. Arrange broccoli spears on narrow end of fish fillets; roll up.
  3. Secure with toothpick.
  4. Place, seam-side down, in microwavable dish; cover (but leave a small opening for vent).
  5. Microwave on HIGH 5 to 7 minutes or until fish flakes easily with fork.
  6. Combine cheese, skim milk (2 ounce = 4 tablespoons), dill, and grated lemon peel in a separate microwavable bowl; microwave 2 to 3 minutes or until sauce is smooth, stirring after each minute.
  7. Prepare rice according to package instructions; top with margarine when rice has finished cooking.
  8. Remove toothpicks from fish roll-ups when ready to serve, and top with sauce; serve rice on the side.
  9. Slice a fresh peach (or 2 halves canned in juice) for each person's dessert.
