Fish, Lemon Broccoli, served with Rice
- 16 ounce sole fillets, raw
- 2 tablespoon lemon juice
- 1/4 teaspoon ground black pepper
- 4 broccoli spears
- 4 ounce VELVEETA LIGHT Reduced Fat Pasteurized Prepared Cheese Product
- 2 ounce fat-free milk
- 1/4 teaspoon dill weed
- 1/2 teaspoon lemon zest
- 2 cup MINUTE Premium White Rice, uncooked
- 3 tablespoon trans fat free canola soft margarine
- 4 peach
- Sprinkle fillets with lemon juice and pepper.
- Arrange broccoli spears on narrow end of fish fillets; roll up.
- Secure with toothpick.
- Place, seam-side down, in microwavable dish; cover (but leave a small opening for vent).
- Microwave on HIGH 5 to 7 minutes or until fish flakes easily with fork.
- Combine cheese, skim milk (2 ounce = 4 tablespoons), dill, and grated lemon peel in a separate microwavable bowl; microwave 2 to 3 minutes or until sauce is smooth, stirring after each minute.
- Prepare rice according to package instructions; top with margarine when rice has finished cooking.
- Remove toothpicks from fish roll-ups when ready to serve, and top with sauce; serve rice on the side.
- Slice a fresh peach (or 2 halves canned in juice) for each person's dessert.
