Cranberry Chutney
- 12 cup raisins
- 12 cup sugar
- 34 cup dark brown sugar
- 14 cup grated orange zest
- 34 cup apple cider vinegar
- 1 small onion, thinly sliced
- 2 apples, peeled and finely chopped
- 12 teaspoon salt
- 1 teaspoon ground ginger
- 12 teaspoon mace
- 1 cup water
- 12 teaspoon curry powder
- 4 cups fresh cranberries
- 34 cup orange juice
- Combine first 4 ingredients in a saucepan.
- Bring to boil.
- Reduce heat and simmer, stirring occasionally, 30 minutes.
- Stir in vinegar and next 6 ingredients.
- Return to boil.
- Reduce heat and simmer, stirring occasionally, 30 minutes.
- Stir in cranberries and remaining ingredients; simmer, stirring occasionally, 10 minutes.
- Cool.
- Chill 8 hours or overnight.
