Packed with Carrot's Sweetness! Carrot Soy Milk Potage Soup
- 1 Carrot
- 1/4 Onion
- 1 pinch Garlic
- 1 mouthful Plain cooked rice
- 200 ml Water
- 1 Soup stock cube (consomme)
- 200 ml Soy milk
- 1 optional Croutons
- 1 optional Dried parsley
- 2 containers Coffee creamer
- These are the ingredients.
- You'll only need one mouthful of cooked rice.
- It will give thickness to the soup.
- Thinly slice the onions.
- Also thinly slice the carrots.
- Put the olive oil in a pot, and saute the onions, carrots, and garlic.
- Once the oil is mixed thoroughly with the vegetables, add the water, consomme cube, and rice.
- Once it comes to a boil, reduce the heat and simmer for 10 minutes.
- Blend the ingredients.
- Return it to the pot.
- It should be a nice yellow color.
- Add the soy milk, and turn on the heat.
- Turn off the heat right before it comes to a boil.
- Season with salt and pepper to taste.
- Transfer it to individual serving bowls.
- I didn't have heavy cream on hand, so I used coffee creamer.
- Swirl in the cream, garnish with croutons or parsley, then the soup is ready!
