Packed with Carrot's Sweetness! Carrot Soy Milk Potage Soup

  1. These are the ingredients.
  2. You'll only need one mouthful of cooked rice.
  3. It will give thickness to the soup.
  4. Thinly slice the onions.
  5. Also thinly slice the carrots.
  6. Put the olive oil in a pot, and saute the onions, carrots, and garlic.
  7. Once the oil is mixed thoroughly with the vegetables, add the water, consomme cube, and rice.
  8. Once it comes to a boil, reduce the heat and simmer for 10 minutes.
  9. Blend the ingredients.
  10. Return it to the pot.
  11. It should be a nice yellow color.
  12. Add the soy milk, and turn on the heat.
  13. Turn off the heat right before it comes to a boil.
  14. Season with salt and pepper to taste.
  15. Transfer it to individual serving bowls.
  16. I didn't have heavy cream on hand, so I used coffee creamer.
  17. Swirl in the cream, garnish with croutons or parsley, then the soup is ready!
