Garlic Ginger Carrots and Broccoli

  1. Wash and peel carrots, then cut into 1/4 inch pieces.
  2. Wash broccoli heads and cut into bite sized florets.
  3. Blanch carrots and broccoli in boiling water for 5 minutes; drain and rinse with cold water.
  4. Peel and mince garlic and ginger.
  5. Heat olive oil in pan over medium high heat.
  6. Add ginger and garlic and saute for about 1 minute.
  7. Add cooked carrots and saute about 5 minutes; add broccoli and saute 2 to 3 minutes more.
  8. Enjoy!
