Herb and Goat's Cheese Muffins
- 1 cup flour
- 2 tablespoons flour
- 2 teaspoons baking powder
- 2 ounces fresh cilantro, minced
- 1 ounce of fresh mint, minced
- 14 teaspoon salt
- 1 egg
- 2 tablespoons oil
- 12 cup milk
- 4 ounces fresh goat's cheese, crumbled
- Preheat oven to 350 degrees F.
- Mix together the flour, baking powder, herbs and salt in a bowl.
- In another bowl, beat the egg with a fork.
- Add the oil and milk and mix well.
- Combine the two mixtures.
- Add the crumbled cheese.
- Pour the mixture into greased muffin molds only half-full and bake for 25 minutes.
